Turkey, Sweet Potato and Kale Hash

Roasted turkey breast, sweet potatoes, and kale sauteed with green pepper, onion, tomato and a hint of cinnamon.

Ingredients

  • 1 1/2 lb sweet potatoes peeled and cubed
  • 3 Tbsp olive oil divided
  • 1/8 tsp ground cinnamon
  • 12 oz fresh kale washed, stems removed
  • 1 ea yellow onion peeled and diced
  • 1 ea green pepper seeded and diced
  • 1 clove garlic peeled and minced
  • 1/2 lb fresh tomatoes cored and diced
  • 3/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 pinch crushed red pepper flakes
  • 3/4 lb roasted turkey breast cubed

Instructions

  • Preheat oven to 375 F.
  • Combine sweet potato cubes, 2 Tbsp oil and cinnamon. Toss to coat.
  • On sheet pan, spread potatoes in single layer.
  • Bake until tender, 10 to 12 minutes.
  • In saute pan over medium-high heat, heat 1 Tbsp oil. Add kale, onion, green pepper, and garlic. Saute until kale is wilted, 3 to 5 minutes.
  • Add remaining ingredients including sweet potatoes. Saute 5-7 minutes until heated through and flavors are combined. Serve hot.
