Turkey, Sweet Potato and Kale Hash
Roasted turkey breast, sweet potatoes, and kale sauteed with green pepper, onion, tomato and a hint of cinnamon.

- 1 1/2 lb sweet potatoes peeled and cubed
- 3 Tbsp olive oil divided
- 1/8 tsp ground cinnamon
- 12 oz fresh kale washed, stems removed
- 1 ea yellow onion peeled and diced
- 1 ea green pepper seeded and diced
- 1 clove garlic peeled and minced
- 1/2 lb fresh tomatoes cored and diced
- 3/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1 pinch crushed red pepper flakes
- 3/4 lb roasted turkey breast cubed
Preheat oven to 375 F.
Combine sweet potato cubes, 2 Tbsp oil and cinnamon. Toss to coat.
On sheet pan, spread potatoes in single layer.
Bake until tender, 10 to 12 minutes.
In saute pan over medium-high heat, heat 1 Tbsp oil. Add kale, onion, green pepper, and garlic. Saute until kale is wilted, 3 to 5 minutes.
Add remaining ingredients including sweet potatoes. Saute 5-7 minutes until heated through and flavors are combined. Serve hot.
