Baked Cauliflower
Battered and baked cauliflower florets

- 1 cup soy milk
- 1/2 cup chickpea flour or garbanzo bean powder
- 2 Tbsp panko bread crumbs
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
- 1/4 tsp paprika
- 3/4 lb cauliflower florets about 1" pieces
Preheat oven to 425 F.
Combine soy milk, chickpea flour, panko, garlic powder, salt and paprika. Whisk until well blended.
Combined batter mixture and cauliflower. Place 1" apart on parchment-lined sheet pan(s) sprayed with cooking spray.
Bake until the tops of cauliflower begin to brown and the cauliflower becomes tender, 20 to 25 minutes.
