Baked Cauliflower

Battered and baked cauliflower florets

Ingredients

  • 1 cup soy milk
  • 1/2 cup chickpea flour or garbanzo bean powder
  • 2 Tbsp panko bread crumbs
  • 1/4 tsp garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp paprika
  • 3/4 lb cauliflower florets about 1" pieces

Instructions

  • Preheat oven to 425 F.
  • Combine soy milk, chickpea flour, panko, garlic powder, salt and paprika. Whisk until well blended.
  • Combined batter mixture and cauliflower. Place 1" apart on parchment-lined sheet pan(s) sprayed with cooking spray.
  • Bake until the tops of cauliflower begin to brown and the cauliflower becomes tender, 20 to 25 minutes.
