Winter Cobb Salad
Ingredients
Maple Dijon Vinaigrette
- 1/2 cup maple syrup
- 3 Tbsp Grey Poupon Dijon Mustard
- 1/2 cup Heinz Apple Cider Vinegar
- 2/3 cup extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
Cobb Salad
- 1 1/4 lbs mixed salad greens
- 2 cups butternut squash diced and roasted
- 5 each apples diced
- 5 each avocados diced
- 1 1/4 cup dried cranberries
- 1 1/4 cup chestnuts roasted and chopped
- 1 cup crumbled blue cheese
- 1 1/4 lbs cooked chicken breast shredded
Instructions
Maple Dijon Vinaigrette
- In a small bowl whisk together the maple syrup, Dijon mustard, cider vinegar, oil, salt and pepper.
Cobb Salad
- Assemble each salad by placing 2 ounces of salad greens onto a serving plate.
- Top the salad greens with 3 Tbsp cooked squash, 1/2 apple diced, 1/2 avocado diced, 2 Tbsp cranberries, 2 Tbsp chestnuts, 1 1/2 Tbsp blue cheese and 2 ounces shredded cooked chicken.
- Serve with 2 Tbsp of Maple Dijon Vinaigrette on the side.
