Tik Tok "Guac"
It's a salad that looks like guacamole that you eat with chips! Also known as a green goddess salad, it is the ultimate chip dip or healthy side dish.
Ingredients
- 1 ea small head of green cabbage
- 1 oz chives
- 6 ea green onions (scallions)
- 1 ea European cucumber
- 1 cup basil
- 1 cup baby spinach leaves
- 2 ea garlic cloves
- 1 ea shallot
- 2 ea lemons juiced
- 1/4 cup walnuts
- 1/4 cup nutritional yeast
- 2 Tbsp rice wine vinegar
Instructions
- Chop cabbage, chives and scallions and place in a large mixing bowl.
- Using a box grater, shave the cucumber into the same mixing bowl.
- In a blender, combine basil, spinach, garlic, shallots, lemons, nuts, yeast and vinegar.
- Pulse the mixture in a blender or food processor until smooth.
- Cover the cabbage mixture with dressing and place in the refrigerator for at least 30 minutes before serving.
