Summer Zucchini Slaw
Shredded zucchini and carrot, feta and red onion tossed with a tangy vinaigrette.
Ingredients
- 1 lb zucchini squash trimmed and shredded
- 4 oz fresh carrot peeled and shredded
- 3-3/4 oz feta cheese crumbled
- 2 oz red onion trimmed and sliced 1/8"
- 1/3 cup olive oil
- 2 1/2 Tbsp cider vinegar
- 1/2 Tbsp fresh oregano leaves minced
- 1/4 tsp kosher salt
- 1/8 tsp ground black pepper
Instructions
- Combine all ingredients. Toss to coat.
