Zesty Avocado & Blueberry Smoothie Bowl
Grab a blender and snack in no time with a gorgeous and nutritious smoothie bowl! 5 minutes is all you need for this American Heart Association recipe.
Ingredients
- 1 medium avocado peeled and halved (save one half for topping)
- 1 cup ice
- 3/4 cup almond milk unsweetened vanilla
- 3/4 cup frozen unsweetened blueberries thawed, 1 Tbsp reserved for topping
- 1/2 cup cucumber slices save some slices for topping
- 2 medium tangerines finely grated for zest, then peeled and separated into segments for topping
- 2 tsp ginger peeled and finely grated
- 1 1/2 tsp chia seeds
- 2 Tbsp sliced almonds
- 8 small basil leaves
Instructions
- In a food processor or high-speed blender, process half of the avocado, ice, almond milk, blueberries, cucumber slices, tangerine zest, ginger, and chia seeds for 2 minutes, or until the mixture is creamy.
- Pour the smoothie into serving bowls.
- Cut the remaining avocado half into thin slices. Arrange the slices in a fan shape on top of each smoothie bowl.
- Decoratively arrange the tangerine segments, almonds, and the remaining cucumber slices around the avocado fan. Garnish with basil.
