Walnut Tacos
Easy, delicious, 10-minute vegan taco “meat” made with walnuts, tomatoes, spices, and peppers! The perfect balance of spice and smokiness, and loaded with protein and healthy fats. Add to tacos, nachos, salads, and more!
Ingredients
- 3 cups raw walnuts
- 2/3 cup canned tomatoes no salt added
- 4 cloves garlic minced
- 1 Tbsp paprika
- 1 Tbsp ground cumin
- 1 Tbsp chili powder
- 1-2 ea chipotle peppers
- 1-2 tsp nutritional yeast optional
- 1 Tbsp olive oil
Instructions
- Put walnuts in a food processor, pulse 3-5 times just until they are slightly chopped up. Transfer walnuts to a medium mixing bowl and set aside.
- Drain tomatoes and reserve liquid. Add tomatoes, garlic, paprika, cumin, chili powder, peppers, and nutritional yeast (optional) to the bowl of the food processor and blend until a smooth paste is formed.
- Add 1 Tbsp at a time of reserved tomato liquid to desired consistency (sauce should be thick but able to be poured).
- Add sauce to walnuts and stir to combine. Taste and adjust flavor with spices as needed.
- Heat pan over medium heat. Add 1 Tbsp oil. Add walnut mixture and sauté 2-3 minutes (just to warm and slightly soften).
- Garnish with radish, avocado, cilantro and other favorite toppings. Enjoy in tacos, salads, nachos, burritos, and more!
