Trail Mix Cookies
These wholesome treats have nuts, fruits, and seeds baked with whole-grain oats and whole-wheat flour.
Ingredients
- 1/2 cup quick oats
- 1/3 cup + 2 Tbsp whole wheat flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup old fashioned rolled oats
- 1/4 cup + 2 Tbsp walnut halves and pieces
- 2 Tbsp poppy seeds
- 1/2 cup dried cranberries
- 1/4 cup dried apricots diced ¼ inch
- 1/3 cup sunflower seeds
- 2 Tbsp canola oil
- 1/4 cup unsweetened applesauce
- 3 Tbsp plain nonfat Greek yogurt
- 3 Tbsp honey
- 1 egg
- 1/2 tsp vanilla extract
Instructions
- Pre-heat oven to 350°F
- In a blender, add quick oats. Blend to make flour. Transfer to a large bowl. Add the following: Whole wheat flour, baking soda, salt. Mix until well blended.
- In another bowl, add the following: Old-fashioned oats, chopped walnuts, poppy seeds, dried cranberries, chopped apricots, sunflower seeds. Mix until well blended.
- In a bowl or stand mixer, add the following: Canola oil, applesauce, Greek yogurt, honey. Using a paddle attachment, mix on medium high until creamy.
- Then add the egg and mix on a low speed.
- Add vanilla and mix until well blended.
- Add flour mixture and mix on low speed until uniform.
- Add oats mixture and mix on low speed until uniform
- Drop by heaped tablespoons onto parchment-lined sheet pans, 2 inches apart. Press cookies to 1/2 inch thickness. Bake 12-15 minutes.
- Let cool for 5 minutes then remove from baking sheets.
