Tangy Cucumber Salad
Cucumber salad is a healthy and vibrant summer go-to! This is a great, light side dish for barbecues, picnics, or potlucks. You can serve immediately or store in the fridge to eat as a snack or side for later.
Ingredients
- 1 lb fresh seedless cucumber washed, thinly sliced
- 1/4 ea red onion trimmed, thinly sliced
- 1 Tbsp + 1 tsp sweet chili sauce prepared
- 1 Tbsp fresh lime juice
- 2-3 Tbsp fresh cilantro leaves washed, chopped
- 1/4 tsp kosher salt
Instructions
- Mix chili sauce, lime juice and salt in a large bowl. Add remaining ingredients and toss to coat.
