Orange Balsamic Grilled Eggplant
Grilled eggplant that has marinated in a blend of orange juice, balsamic vinegar, honey, and shallots.

Ingredients
- 1/4cup orange juice
- 3Tbsp balsamic vinegar
- 3Tbsp vegetable or olive oil
- 2Tbsp honey
- 1Tbsp minced shallotor substitute garlic
- 2pinches kosher salt
- 2pinches ground black pepper
- 2lb eggplanttrimmed and sliced crosswise into rounds
Instructions
- Whisk together marinade ingredients. Add eggplant slices and toss to coat. Let marinate 30 minutes to 1 hour.
- Remove eggplant slices from marinade; grill eggplant on hot grill until done.
