Harira Moroccan Stew
A hearty, flavorful Moroccan stew made with ground beef and turkey, tomatoes, lentils, chickpeas, pasta, cinnamon, and cumin.
Ingredients
- 1 Tbsp olive oil
- 9 1/2 oz ground turkey 90/10
- 8 oz ground beef 75/25
- 1 yellow onion trimmed and diced 1/2"
- 5 cups no salt added diced canned tomatoes drained
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground turmeric
- 1/4 tsp ground cayenne pepper or to taste
- 2 pinches ground cumin
- 8 oz low sodium canned chickpeas (garbanzo beans) rinsed and drained
- 1/4 cup dried brown lentils rinsed and drained
- 4 3/4 oz dry spaghetti pasta broken into 2" pieces about 1/4-1/5 of a standard 16 oz. box
- 1 Tbsp fresh cilantro leaves chopped
Instructions
- In stockpot over medium-high heat, heat oil. Add turkey, beef, and onion. Saute until turkey and beef are browned, 6 to 8 minutes.
- Add tomatoes, salt, black pepper, cinnamon, ginger, turmeric, cayenne and cumin. Mix well.
- Add chickpeas and lentils. Bring to a boil. Reduce heat. Cover. Simmer until lentils are tender, 15 to 18 minutes.
- Stir in pasta pieces. Return to a boil. Reduce heat. Cover. Simmer until pasta is al dente, 10 to 12 minutes.
- To serve, stir in cilantro.
