
Greek Salad Pita Sandwich
Whole-wheat pita stuffed with fresh veggies, feta cheese and Kalamata olives and tossed in Greek-style dressing.

Ingredients
- 1 ea ripe tomato cored and diced
- 1/2 ea English (seedless) cucumber diced
- 1/2 ea green pepper seeded and diced
- 1 Tbsp feta cheese crumbled
- 2 Tbsp red onion peeled and diced
- 1 Tbsp Kalamata olives pitted and chopped
- 1/8 tsp ground black pepper
- 2 Tbsp Greek vinaigrette recipe follows
- 2 ea whole-wheat pita pockets cut in half
- 4 ea fresh lettuce leaves red or green leaf lettuce works well
Greek Vinaigrette
- 1 1/2 tsp red wine vinegar
- 1/8 tsp fresh lemon juice
- 1/2 ea garlic clove peeled and minced
- 1 pinch sugar optional
- 1 tsp fresh mint leaves chopped
- 1/2 tsp fresh lemon zest minced
- 1/4 tsp dried oregano
- 1 pinch coarse kosher salt
- 1 pinch ground black pepper
- 1 Tbsp extra virgin olive oil
Instructions
Greek vinaigrette
- In blender or food processor, combine all ingredients except oil. Blend until smooth.
- With blender running, add oil in a steady stream until blended.
Greek Salad
- Add tomatoes, cucumber, green pepper, feta, olives, red onion and black pepper to a bowl.
- Drizzle with Greek Vinaigrette. Toss to coat.
Sandwich Assembly
- In each pita pocket half, add 1 lettuce leaf.
- Spoon in 1/4 of the tomato-cucumber mixture and serve.
