Cilantro Pumpkin Seed Pesto
A tasty twist on traditional pesto, this recipe combines cilantro, pumpkin seeds, Parmesan cheese, garlic, and olive oil.
Ingredients
- 3/4 cup olive oil
- 1/4 cup shelled pumpkin seeds raw and unsalted
- 1/2 cup grated Parmesan cheese
- 3 Tbsp fresh lemon juice
- 1/2 cup fresh cilantro leaves
- 1 clove garlic peeled and chopped
- 1 tsp sesame oil
- 1/2 tsp kosher salt
Instructions
- In food processor, combine all ingredients. Process until smooth.
Notes
Toss hot pasta with pesto, spread it onto sandwiches, or whisk it with vinegar and more olive oil to make a delicious vinaigrette for salads.
