Chicken & Chickpea Shawarma
From our Twisted Beet menu - a flavorful mix of chicken and chickpeas sautéed with a Shawarma Spice.
Ingredients
- 10 ounces chicken boneless, skinless thighs
- 4 tsp olive or vegetable oil
- 1 can garbanzo beans (chickpeas) low sodium, rinsed and drained
- 1/2 tsp lemon juice
- 2 each green onion trimmed, sliced 1/4"
Shawarma Spice
- 1/2 tsp kosher salt
- 2 Tbsp ground coriander
- 1 tsp gound cumin
- 2 tsp paprika smoked
- 1/4 tsp ground black pepper
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees
- Combine chicken, 1-2 Tbsp Shawarma Spice, first amount of oil. Toss to mix.
- On a sheet pan coated with cooking spray, place chicken in a single layer. Bake until internal temperature reaches 165 degrees F and juices run clear, 10-12 minutes.
- Remove from pan. Dice chicken 1/2"
- In sauté pan, over medium-high heat, heat second amount of oil. Add beans. Sauté until golden brown, 5-8 minutes.
- Add chicken, 1-2 Tbsp Shawarma Spice, lemon juice, and green onion. Toss to mix and serve.
