Caprese Avocado Toast
Open-faced sandwich with avocado-basil spread, mozzarella, arugula and tomato
Ingredients
- 6 slices whole wheat bread toasted
- 2 cups fresh baby arugula leaves
- 1 cup cherry or grape tomatoes cut lengthwise in half
- 6 oz fresh mozzarella drained, thinly sliced
- 1/2 cup avocado cut, pitted, sliced
- 1 Tbsp fresh basil chopped
- 1 Tbsp grated Parmesan cheese
- 1 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- 1 pinch kosher salt
- Parmesan cheese crisps optional
Instructions
- To make Avocado Basil Spread, in a food processor, combine avocado, basil, Parmesan, lemon juice, olive oil and salt. Process until smooth.
- On each piece of toasted bread, spread 2 Tbsp Avocado Basil Spread. Next, layer mozzarella slices, top with arugula and tomatoes.
Notes
If you want some added crunch, sprinkle crumbled Parmesan cheese crisps on top.
