A vegan taco with seasoned black beans and fresh kale, topped with avocado and pico de gallo.

  1. In saute pan over medium-high heat, heat oil. Add onion and garlic. Saute until onion is translucent, 3 to 5 minutes.
  2. Add jalapeno and kale. Sauté until kale is wilted, 3 to 5 minutes.
  3. Add beans, cumin, salt, hot sauce and pepper. Sauté until beans are heated through.
  4. Build your tacos (2 tacos per serving) – in each tortilla, layer seasoned black bean and kale mixture, pico de gallo, and avocado.
