Beet Slaw
From our Twisted Beet menu, this recipe combines beets and apples for a fresh, crisp slaw.
Ingredients
- 2 1/2 tsp extra virgin olive oil
- 1 tsp honey
- 1 tsp lemon juice
- 1/2 ounce parsley leaves, chopped
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 5 ounces red beet peeled, cut in slices 1" x 1/8" x 1/8"
- 2 ounces granny smith apples peeled, cut in slices 1" x 1/8" x 1/8"
- 1 ounces fennel trimmed, cut into 1/8" wide strips
Instructions
- Combine olive oil, honey, lemon juice, parsley, salt and pepper. Whisk until well blended.
- Combine beet, apple, fennel and olive oil mixture. Toss to coat.
Notes
Use a Mandoline for quick slicing.
