Banana Pumpkin Mousse
Banana and pumpkin pureed with creamy thick yogurt, honey, cinnamon, ginger and nutmeg.
Ingredients
- 3/4 cup plain nonfat Greek yogurt see note below*
- 2 ea large bananas peeled, diced 1/2"
- 1 can canned pumpkin 15oz
- 1 Tbsp honey
- 3/4 tsp ground cinnamon
- 1/2 tsp pure vanilla extract
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
Instructions
- In blender, process banana on medium speed until smooth, 2-3 minutes.
- Add remaining ingredients. Process 1 minute. Scrape down sides of blender. Process until well blended, 1 minute.
- Scoop 1/2 cup of mousse into serving cup or small bowl. Serve with a dollop of low-fat vanilla yogurt and chopped nuts if desired.
Notes
*For an even thicker consistency, strain the Greek yogurt through several layers of cheesecloth over a colander.
