Baked Cauliflower
Battered and baked cauliflower florets
Ingredients
- 1 cup soy milk
- 1/2 cup chickpea flour or garbanzo bean powder
- 2 Tbsp panko bread crumbs
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
- 1/4 tsp paprika
- 3/4 lb cauliflower florets about 1" pieces
Instructions
- Preheat oven to 425 F.
- Combine soy milk, chickpea flour, panko, garlic powder, salt and paprika. Whisk until well blended.
- Combined batter mixture and cauliflower. Place 1" apart on parchment-lined sheet pan(s) sprayed with cooking spray.
- Bake until the tops of cauliflower begin to brown and the cauliflower becomes tender, 20 to 25 minutes.
