Apricot Brussels Sprouts Slaw
Experiment with different ingredients to kick a traditional slaw into high gear. High in fiber and essential vitamins, this recipe includes dried apricots and Brussels sprouts—another cabbage cousin! It’s all tossed in a light and flavorful Dijon mustard vinaigrette.
Ingredients
- 3 cups Brussels sprouts washed, trimmed and shredded
- 1/2 cup dried apricots chopped
- 3 Tbsp seasoned rice wine vinegar
- 2 Tbsp red onion trimmed and diced
- 2 Tbsp Dijon mustard
- 1 Tbsp honey
- 1 Tbsp sugar
- 3/4 tsp kosher salt
- 3/4 tsp ground black pepper
Instructions
- Combine all ingredients. Toss to coat.
- Cover and keep chilled for service.
