Apple Chutney
Sweet and spicy apple-cranberry condiment spiced with ginger, cinnamon and cayenne.
Ingredients
- 1/4 tsp olive or vegetable oil
- 1 Tbsp red onion diced
- 1 Tbsp green pepper diced
- 1 Tbsp red pepper diced
- 1 lb granny smith apple peeled, cored, cut into 1/8 wedges
- 1 Tbsp dried cranberries
- 2 Tbsp apple juice
- 1 1/2 Tbsp brown sugar
- 1 Tbsp ginger root peeled, minced
- 3/4 tsp lemon juice
- 1 pinch ground cinnamon
- 1 pinch ground cayenne pepper
Instructions
- In stockpot over medium-high heat, heat oil. Add onion and green and red peppers. Saute until tender-crisp, 2-3 minutes.
- Add apple and cranberries. Sauté until heated through, 1-2 minutes.
- Add remaining ingredients. Bring to a boil. Reduce heat. Simmer 10-12 minutes.
- Serve.
