PB&Q Energy Bites
A tasty, protein-packed snack with oats, quinoa, dried fruit, and peanut butter.
Ingredients
- 1 cup rolled oats
- 3/4 cup cooked white quinoa
- 1/3 cup dried apricots chopped
- 1/3 cup smooth peanut butter
- 1/3 cup dried cranberries
- 2 1/2 Tbsp water
Instructions
- Blend the oats in a food processor until smooth. Set aside in a large bowl.
- Add to the food processor the cooked quinoa, dried apricots, dried cranberries, peanut butter, and water and blend until they form a paste.
- Stir the paste into the oats and mix well until combined. Place the mixture in the refrigerator for 1 hour.
- Remove the mixture from the fridge and shape into bite-sized balls. Store in the fridge until ready to eat and enjoy.
