Pecan-Cranberry Mixed Grains
It’s fruity. It’s nutty. It’s filled with whole-grain goodness! This dish features hearty brown rice and bulgur wheat simmered with dried cranberries and herbs. Top it off with toasted pecans for a little crunch.
Parsnip and Cauliflower Puree
Move over, mashed potatoes! This new whip is loaded with nutrients and flavor. Slightly sweet and nutty-tasting parsnips are cooked with fresh cauliflower then pureed with lemon juice and tarragon for a side to root for.
Balsamic Glazed Roasted Carrots
Roasting carrots enhances their flavor and natural sweetness. Once they’re roasted to a tender-crisp stage, the carrots get simmered in a reduction of balsamic vinegar and red onions. Top with a little chopped fresh parsley or other herb of your choice.
