There are so many fruits and vegetables at their peak right now! The grocery aisles and farmers’ markets (and maybe your neighbors’ backyards) are full of fresh ripe corn, cucumbers, zucchini, melons, cherries, berries, and more. But what can you do with all this bounty? Here are three recipes our chefs put together to celebrate the season.
Spicy Watermelon Salsa
Sure, fresh watermelon is great by itself as a sweet treat. But it can be so much more! Toss it with chopped tomatoes and mint for a flavor-packed salad. Or chop fresh watermelon, red and green onions, fiery jalapeno, and cilantro and toss it with lime juice for a perfect salsa to top tacos or grilled chicken—or as a dip.
Confetti Corn Salad
It’s hard to find a side dish that packs in so many garden-fresh summer ingredients! This party-on-a-plate has corn, bell peppers, cucumbers, leeks, radishes, jalapenos, and dill—all tossed with a spicy sweet-and-sour dressing that makes the dish a summer cookout stand-out.
Berry Yogurt Pops
July is National Berries Month—a great time to find your favorite berries and put them in everything! For a cool and sweet treat, creamy Greek yogurt and fresh berries—and a little freezer time—make perfect popsicles.
