Celebrate the Stars of Summer
To celebrate summer here are a few chef recommended side dish recipes featuring some of the season’s finest fruits and vegetables.
Black Bean and Corn Salad
Is it a side salad? A dip for tortilla chips? A topping for grilled chicken or fish? The answer is: Yes! The cilantro-lime vinaigrette spiced with chili powder, cumin, and minced jalapeno gives this dish a decidedly southwestern flair drizzled over a colorful mix of black beans, corn, tri-colored bell peppers, and minced red onions.
Watermelon-Tomato Salad
Could it get much simpler? This tangy-sweet side features fresh-cut watermelon and plum tomatoes tossed with fresh basil and mint in a red wine vinaigrette.
Summer Zucchini Slaw
It’s the season of fresh summer squash popping up at roadside stands, weekend farmers’ markets—or in your back yard garden! This is a twist on your typical slaw—with shredded raw zucchini and carrots tossed with crumbled feta, red onions, fresh oregano, and the simplest of vinaigrettes.
