Garlic Shrimp & Zoodle Bowl
Sautéed shrimp with zoodles, grape tomatoes and spinach in garlic sauce
Ingredients
Grilled Shrimp
- 12 ounces shrimp
- 2 tsp olive or vegetable oil
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
Zoodle Bowl
- 2 tsp olive or vegetable oil
- 1-2 cloves garlic peeled and minced
- 14 ounces zucchini spirals
- 1 cup grape tomatoes cut in quarters
- 2 cups fresh spinach julienne
- 1 cup low sodium vegetable broth
Instructions
Grilled Shrimp
- Combine shrimp, first amount of oil, salt and pepper. Toss to coat.
- In sauté pan, over medium-high heat, sauté shrimp until opaque in center, 6 to 8 minutes.
- Set aside.
Zoodle Bowl
- In sauté pan, over medium-high heat, heat oil. Add the following: garlic, zucchini noodles, grape tomatoes, and spinach.
- Sauté until spinach is wilted and noodles are tender-crisp, 2 to 3 minutes.
- Divide into bowls, add grilled shrimp, add broth.
