Caramel Apple Pecan Parfait
Vanilla yogurt with roasted caramel apple & pecans
Ingredients
Caramel Apple Pecan Parfait
- 2 cups Roasted Apples & Cinnamon *see ingredients & instructions below
- 1 cup low fat vanilla yogurt
- 1/3 cup caramel topping
- 3 Tbsp chopped pecans
Roasted Apples & Cinnamon
- 2 cups granny smith apple peeled, cored, diced
- 1 Tbsp granulated sugar
- 1/8 tsp ground cinnamon
- 1/8 tsp kosher salt
Instructions
Roasted Apples & Cinnamon
- Preheat oven to 350 degrees F.
- Combine all ingredients. Toss to coat.
- On parchment-lined sheet pan coated with cooking spray, spread apples in single layer.
- Bake until tender, 15 to 18 minutes. Cool.
Caramel Apple Pecan Parfait
- For 1 serving, in parfait cup layer 2 1/2 Tbsp roasted apples, 2 1/2 Tbsp yogurt, 2 1/2 Tbsp roasted apples, 1 Tbsp caramel topping, 1 1/2 tsp pecans.
