Black Bean Brownies
These chocolatey brownies get a boost of fiber and moisture from canned black beans. The recipe can even be made vegan with by replacing the eggs with applesauce.
Ingredients
- 1 can (15.5 oz) black beans rinsed and drained
- 3/4 cup sugar or ¼ cup coconut sugar
- 1/4 cup cocoa powder
- 1/4 cup applesauce or honey
- 2 large eggs or 1 cup applesauce (vegan)
- 3 Tbsp vegetable oil or coconut oil, melted
- 1/2 tsp baking powder
- 1 tsp instant coffee or instant espresso optional
- 1 tsp vanilla extract
- 1 pinch salt
- 1/2 cup dark chocolate chips or milk chocolate chips optional
Instructions
- Preheat the oven to 350 degrees F. Lightly grease an 8-inch square baking dish.
- Combine beans, sugar, cocoa powder, eggs (if using), applesauce, oil, instant coffee (if using), vanilla, baking powder, and salt in a blender; blend until smooth.
- Pour into the prepared baking dish. Sprinkle chocolate chips over the surface.
- Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
- Let cool. Cut into 16 brownies, 2 inches square.
