Sweet Potato Smash
Got leftovers? Try this favorite "smash" sandwich with sweet potato, goat cheese, cranberry sauce and arugula on a whole grain ciabatta.
Ingredients
- 4 each ciabatta rolls whole grain
- 1/2 cup cranberry sauce
- 1 1/2 oz baby arugula
- 1 cup sweet potatoes mashed
- 5 oz goat cheese crumbled
Instructions
- Split ciabatta rolls.
- Spread cranberry sauce on bottom. Top with baby arugula, mashed sweet potatoes, and goat cheese.
- Cut diagonally in half
