Beet Ketchup
From our Twisted Beet menu - beets, cider vinegar and seasoning blended to a smooth ketchup
Ingredients
- 2 1/2 lbs red beets peeled, chopped
- 2 1/2 cup cider vinegar
- 1 1/4 cup brown sugar
- 2 ounces yellow onion trimmed, chopped
- 1 tsp kosher salt
- 1/2 tsp ground coriander
- 1/2 tsp ground cloves
- 1/4 tsp ground black pepper
Instructions
- Steam cook beets until fork tender, 25 to 30 minutes.
- In blender or food processor, combine all ingredients. Process until smooth.
- Cover and store in refrigerator. Serve chilled.
