Peaches & Cream
Ingredients
- 1/3 cup heavy whipping cream
- 2/3 cup vanilla yogurt if using plain yogurt, add a little honey and vanilla to taste
- 2 medium peaches ripe (or use 8oz canned, no sugar added, drained)
- 4-8 leaves mint optional
Instructions
- Remove skin on 1 peach and chop. Puree using food processor or blender. (Use 4oz if using canned peaches.)
- Combine heavy cream and yogurt. Whip on high using a hand mixer and immersion blender until light until fluffy. Fold in pureed peaches.
- Slice other peach. Place in bottom of serving bowls. Top with peaches and cream. Garnish with mint.
