Chocolate Chip Blondie
Chocolate chip dessert bar made with garbanzo beans, oats, and vanilla.
Ingredients
- 3 cups canned low sodium chickpeas (garbanzo beans) 2-15oz cans, drained, liquid reserved
- 3/4 cup dark chocolate chips may use vegan chips
- 1/2 cup light brown sugar
- 1/4 cup old-fashioned oats
- 2 Tbsp all-purpose flour may use gluten-free flour
- 1 Tbsp applesauce unsweetened
- 1/2 Tbsp pure vanilla extract
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp kosher salt
- 1/8 tsp ground nutmeg
Instructions
- Preheat oven to 350 F.
- In a food processor, add chickpeas and 1/4 cup of reserved chickpea liquid. Process until smooth.
- In a mixer with paddle attachment, on medium speed, add pureed chickpeas and remaining ingredients. Mix 30 seconds or until well combined. Do not overmix.
- Into a 8 x 8 baking pan coated with cooking spray, spread batter.
- Bake until wooden pick inserted in center comes out clean, 28 to 30 minutes.
- Cool completely on rack and then refrigerate 2 hours before cutting.
- Cut pan 4 x 4 into 16 portions.
