Corn Mush
Sometimes called Hasty Pudding, Corn Mush is a cornmeal pudding made with eggs and milk and sweetened with molasses. The mixture gets cooked in the oven in a water bath until firm.
Ingredients
- 2 cups milk reduced fat
- 4 ea corn cobs kernels removed
- 4 ea large eggs
- 1/2 cup plant-based butter such as Earth Balance
- 1/2 cup flour
- 1/2 cup cornmeal
- 1 Tbsp baking powder
- 1 pinch salt
- 2 Tbsp brown sugar
- 2 Tbsp molasses
- cinnamon to taste optional
Instructions
- Preheat oven to 325F. Butter a baking dish and set a water bath.*
- In a large saucepan over medium heat, add milk and corn cobs. Simmer on low until milk bubbles. Remove corn cobs.
- Slowly whisk in cornmeal. Continue to cook at a low simmer until thickened. Stirring regularly.
- Incorporate butter until smooth and combined. Remove from heat.
- Add sugar and molasses. Stir until combined.
- In a separate bowl combine flour, baking powder, and salt.
- Add flour mixture until smooth and combined. Add cinnamon if desired.
- Pour into buttered dish. Bake in preheated oven in water bath for up to 2 hours, until set.
Notes
*A water bath is a pan of water placed in the oven. To use a water bath you simply fill a large enough pan with water, then place the baking dish into the pan of water. The water should reach about half way up the pan.
