Rainbow Flatbread
Ingredients
- 1 oz black beans if canned, choose low sodium and rinse beans
- 1/4 cup red onions diced
- 1 tsp lime juice
- 1 tsp taco seasoning
- 1/2 cup shredded mozzarella
- 1/4 cup green pepper diced
- 1/4 cup red pepper diced
- 1/4 cup corn if canned, choose low sodium and rinse kernals
- sriracha optional
- 2 each whole grain flatbread 6x6"
- 1/4 cup salsa
Instructions
- Preheat standard oven to 400 F.
- Combine beans, onions and lime juice. Toss to mix
- Combine cheese and taco seasoning. Toss to mix.
- Combine red and green peppers. Toss to mix.
- Combine corn and Sriracha (optional). Toss to mix
For each flatbread:
- Layer mozzarella cheese and taco seasoning on each flatbread
- In 2 inch strips place the following: Mixed peppers Bean and onions Corn
- Bake until crust is brown and cheese is bubbly, about 10-12 minutes
