White Bean Spread
A smooth blend of cannellini beans, roasted garlic, lemon juice, and black pepper. Serve with fresh vegetables as a dip or as a spread on your favorite sandwich.
Ingredients
- 1 clove roasted garlic instructions below
- 1 15-oz can cannellini (white) beans rinsed and drained
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Preheat oven to 325 F. Toss 1 clove peeled garlic with a little oil. Wrap in foil. Place on sheet pan and bake until garlic is soft and golden, 25 to 30 minutes. Unwrap. Cool.
- Combine roasted garlic and all other ingredients in food processor. Process until smooth. Serve or keep covered and chilled until use.
