Zesty Spinach Pasta Toss
A light, easy, one-pot pasta dish featuring chopped tomatoes and fresh spinach.
Ingredients
- 1 lb whole wheat penne or similar-sized pasta
- 2 cans (14.5 oz ea) Italian style diced tomatoes
- 2 cups low sodium vegetable broth
- 4 cups baby spinach leaves
- 1 cup 2% shredded Italian blend cheese
- 1/2 tsp crushed red pepper flakes
Instructions
- In a large saucepan, bring tomatoes, red pepper flakes, pasta, and broth to a boil.
- Cover and simmer on medium-low heat for about 10 minutes (pasta should be almost cooked).
- Add half of the spinach, cover and simmer for 2 minutes or until the spinach has wilted.
- Stir the pasta and repeat with remaining spinach.
- Top each serving with cheese and serve hot.
