Orange Balsamic Grilled Eggplant
Grilled eggplant that has marinated in a blend of orange juice, balsamic vinegar, honey, and shallots.
Ingredients
- 1/4 cup orange juice
- 3 Tbsp balsamic vinegar
- 3 Tbsp vegetable or olive oil
- 2 Tbsp honey
- 1 Tbsp minced shallot or substitute garlic
- 2 pinches kosher salt
- 2 pinches ground black pepper
- 2 lb eggplant trimmed and sliced crosswise into rounds
Instructions
- Whisk together marinade ingredients. Add eggplant slices and toss to coat. Let marinate 30 minutes to 1 hour.
- Remove eggplant slices from marinade; grill eggplant on hot grill until done.
