Fresh Tomato and Basil Penne
Whole-grain pasta tossed with fresh tomatoes, red onions, garlic, and basil.
Ingredients
- 1 Tbsp + 1 tsp olive oil
- 3 Tbsp fresh red onion trimmed and diced 1/4"
- 1 clove garlic peeled and minced
- 1.5 lb fresh tomatoes cored and diced 1/4"
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 4 cups whole grain penne cooked al dente
- 2 Tbsp fresh basil leaves thinly sliced
Instructions
- In large saute pan or stockpot over medium-high heat, heat oil. Add onion and garlic. Saute until onion is translucent, 3 to 5 minutes.
- Add tomato, salt, and pepper. Cook until heated through.
- Add cooked pasta and basil. Toss to mix. Cook until heated through. Serve.
