Pumpkin Spice Blondies
A tasty dessert treat made with beans, pumpkin, maple syrup, and spice.
Ingredients
- 2 3/4 cups navy beans or other white beans drained and rinsed
- 5 tsp white vinegar
- 3/4 cup +3 Tbsp pumpkin puree
- 3 Tbsp canola oil
- 1 tsp vanilla extract
- 1/2 cup maple syrup
- 2 1/2 cups rolled oats
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 Tbsp graham cracker crumbs
Instructions
- Pre-heat oven to 350°F. Generously coat a mini-muffin pan with cooking spray.
- Add all ingredients except for the graham cracker crumbs to a food processor. Process until smooth. Transfer batter to a large bowl.
- Place 1½ Tbsp of prepared batter into each of 24 mini-muffin pans.
- Top each blondie bite with ¼ tsp of graham cracker crumbs.
- Bake for 10-12 minutes or until a toothpick inserted in the middle comes out clean.
- Let cool for 5 minutes. Remove pumpkin spice blondie bites from pan and allow to cool on racks.
