Gingerbread Cake with Light Cream Cheese Frosting
Ingredients
- 1 1/4 cup whole-wheat flour
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp baking soda
- 1/4 cup unsweetened applesauce
- 1/2 cup low fat buttermilk
- 1/2 cup sugar
- 1/2 cup molasses
- 2 oz PHILADELPHIA Neufchatel Cheese or light cream cheese
- 1 Tbsp margarine softened
- 1/4 cup confectioners sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp vanilla extract
Instructions
- Preheat oven to 350 F.
- Whisk together the flour, cinnamon, ginger and baking soda in a bowl and hold aside.
- In a larger bowl, with an electric mixer combine the applesauce, buttermilk, sugar, molasses and egg.
- Add the flour mixture to the wet ingredients and continue to mix until well combined.
- Pour the mixture into a prepared 8” square pan.
- Bake for 25-30 minutes or until the cake is set in the center. Remove from the oven an allow to cool completely.
- With an electric mixer, beat the cream cheese, margarine, confectioners sugar and vanilla until light and fluffy.
- Spread the frosting on top of the cooled cake before serving.
