Black Bean & Kale Taco
A vegan taco with seasoned black beans and fresh kale, topped with avocado and pico de gallo.
Ingredients
- 2 tsp olive or vegetable oil
- 1/4 cup yellow onion diced
- 1 clove garlic peeled and minced
- 1 medium jalapeno pepper seeded and diced
- 3 ounces kale chopped (about 1-2 cups)
- 16 ounces black beans cooked or canned, low sodium
- 3/4 tsp cumin
- 3/4 tsp kosher salt
- 3/4 tsp hot pepper sauce
- 1/4 tsp ground black pepper
- 8 each tortilla 6"
- 1 cup Pico de Gallo
- 1 medium hass avocado
Instructions
- In saute pan over medium-high heat, heat oil. Add onion and garlic. Saute until onion is translucent, 3 to 5 minutes.
- Add jalapeno and kale. Sauté until kale is wilted, 3 to 5 minutes.
- Add beans, cumin, salt, hot sauce and pepper. Sauté until beans are heated through.
- Build your tacos (2 tacos per serving) - in each tortilla, layer seasoned black bean and kale mixture, pico de gallo, and avocado.
