Jalapeño Pea Mash
Ready for something new? Try this smooth blend of seasoned green peas, fresh jalapeno and parsley.
Ingredients
- 3 cups peas frozen
- 2/3 cup low sodium vegetable broth
- 1 each jalapeno pepper seeded and diced
- 1/2 cup fresh parsely chopped
- 2 tsp olive or vegetable oil
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- In stockpot, over medium-high heat, bring frozen peas and broth to a boil. Reduce heat. Cover. Simmer until tender, about 10 minutes.
- In blender or food processor, combine undrained pea mixture and remaining ingredients. Blend until smooth.
- Enjoy warm or chilled!
Notes
Add more or less of the pepper and parsley to taste.
