Cumin-Spiced Roasted Butternut Squash
Roasted butternut squash tossed with extra virgin olive oil, lemon juice, honey, parsley and cumin.
Ingredients
- 1 1/2 lbs butternut squash peeled, seeded and diced
- 2 tsp extra virgin olive oil
- 1/8 tsp ground black pepper
- 1 1/2 tsp honey
- 1 tsp lemon juice
- 1 Tbsp extra virgin olive oil
- 2 tsp parsley
- 1/4 tsp ground cumin
- 1/4 tsp kosher salt
Instructions
- Preheat oven to 350 F.
- Toss butternut squash with oil and pepper.
- Bake until fork tender, 15-20 minutes, and allow to cool.
- Combine honey, lemon juice, oil, parsley, cumin and salt. Whisk to combine.
- Add butternut squash. Toss to coat.
