Oat Bran Muffins (Serves 12)
Ingredients
- 2 Cups Oat Bran (uncooked)
- ¼ Cup Brown Sugar
- 2 Teaspoons Baking Powder
- ½ Teaspoon Salt
- 1 Cup Milk, 2% Reduced Fat
- 2 Egg Whites (slightly beaten)
- ¼ Cup Honey
- 2 Tablespoons Vegetable Oil
- 1 Cup Raisins, roughly sliced
- ¼ Cup Walnuts, coarsely chopped to preference
Directions
- Start by preheating your oven to 425º. Prepare your medium muffin pan by lining the cups with paper liners or with a light coating of non-stick cooking spray.
- In a large mixing bowl combine the oat bran cereal, brown sugar, baking powder, and salt.
- In a smaller bowl, lightly beat two egg whites with a fork. Stir in milk, honey, and oil until the honey is mostly dissolved.
- Combine the egg mixture with the oat bran mixture and mix until the dry ingredients are moistened.
- Spoon the batter into the muffin tin filling each cup about ¾ of the way full, leaving room for the muffins to expand as they bake.
- Bake for 15 to 17 minutes, or until golden brown.
